导读:近年来,生态酿酒如一阵春风吹遍了中国的大江南北,先后有沱牌舍得、五粮液、茅台、泸州老窖、迎驾贡、稻花香、白云边、金六福、景芝、金江津、百脉泉、李渡、姚花春、湘窖等二十余家白酒企业实行生态化酿造和生态化经营。

——“生态酿酒”重要问题考据

  :考证“生态酿酒”的前世今身,它发祥于四川盆地中部,在“道”、“绿”、“射洪春酒”的交融中产生;二十余年来,酿酒业从单纯追求花园式、园林式工厂过渡到以酿酒微生物为核心构建生态环境,逐渐延伸到资源的节约和污染的治理,随后与循环经济、低碳与清洁生产相融合,并通过生态化经营得以升华,最终嬗变为消费者享用的生态酒;自上世纪90年代末沱牌创建了最早的中国生态酿酒工业园后,生态酿酒工业园如雨后春笋般出现;生态酿酒学的构建彰显了先行者们的远见卓识,也集聚了酿酒科技人员的集体智慧,是行业共享的重要成果;2001年,《走向生态化经营——沱牌集团的创新及其思考》首次全面论述了生态文明,助推酿酒业成为较早践行生态文明的产业。

The research on ecological brewing : A dedication to Chinese ecological civilization

Abstract: Research on 'Brewing Ecologically’, which originated from Tuopai Shede Wine in Shehong County of the central Sichuan Basin, born in the blend of “Dao”, “Green” and “Wine”. In the past twenty years, the concept of brewing industry moved from the human-centered garden-, garden-style to the microorganisms centered brewing (wine), it gradually extended to resource conservation and pollution control and integrated with recycling economy, and low-carbon clean production. It was submilated through ecological management, which aimed to make ecological wine for consumers to enjoy. Since the late 90s of the last century, Tuopai had created the first China’s brewing ecologically industrial park, then brewing ecologically industrial parks sprung up; The building of Ecological oenology demonstrates pioneers foresight. It gathers the collective wisdom of the scientific and technical personnel who engaged in Liquor-making, and is an important achievement shared by entire industry. 2001, "Towards ecological management - Tuopai Group's innovation and thinking" become an early book which fully discusses the ecological civilization, wine industry was an early practice of ecology civilization.

前言

近年来,生态酿酒如一阵春风吹遍了中国的大江南北,先后有沱牌舍得、五粮液、茅台、泸州老窖、迎驾贡、稻花香、白云边、金六福、景芝、金江津、百脉泉、李渡、姚花春、湘窖等二十余家白酒企业实行生态化酿造和生态化经营。“生态酿酒”经过二十余年的艰辛探索之后,逐渐成为酿酒行业蓬勃兴起的企业行为,“生态酿酒”已然成为当下最热门的词汇之一。

目前,生态酿酒的具体体现,一是企业采用生态方法酿造中国白酒,二是创建了生态酿酒工业园。然而,到底什么是生态酿酒,什么是生态酿酒工业园,它的前世今身究竟是什么?本文试着以公开可查的事实和资料为依据,还原一个真实的“生态酿酒”。

1 生态酿酒热是时代进步的必然趋势

1.1政策导向

2008年,党的十七大报告中第一次提到“生态文明”,称中国在全面建设小康社会的进程中,要“建设生态文明,基本形成节约能源资源和保护生态环境的产业结构、增长方式、消费模式”。2012年,党的十八大政治报告中称:“建设生态文明,是关系人民福祉、关乎民族未来的长远大计。”“我们一定要更加自觉地珍爱自然,更加积极地保护生态,努力走向社会主义生态文明的新时代。”生态文明建设与经济建设、政治建设、文化建设、社会建设一起纳入“五位一体”总体布局。而生态酿酒是酿酒业实现生态文明的必由之路。

中国白酒作为一种特殊的商品,既有物质属性,更有精神属性。从某种意义上讲,喝酒就是喝历史、喝文化、喝理念。由于白酒业的历史和文化一脉相承,早已为公众所熟知,因此,理念的宣传对酿酒企业来说就显得更加必要。中国酿造是自然发酵产物,由天、地、人共酿,这正好与生态理念不谋而合,也顺应了党和国家政策导向。
